Summer Berry Salad with Prosciutto
Ingredients
3 Tbsp. olive oil
3 Tbsp. fresh lime juice
1-1/2 Tbsp. chopped fresh basil
1-1/2 Tbsp. chopped fresh parsley
3/4 tsp. coarse kosher salt
1/4 tsp. finely grated lemon peel
1-1/2 cups fresh blueberries
1-1/2 cups fresh raspberries
1-1/2 cups fresh strawberries, quartered
1-1/2 cups thinly sliced red onions
18 paper-thin prosciutto slices
Additional grated lemon peel (optional)
Directions
1. Combine olive oil, lime juice, basil, parsley, salt and lemon peel.
2. Combine berries and onions. Toss lightly with oil mixture.
3. Divide prosciutto slices evenly among 6 plates. Top with berry mixture.
4. Garnish with grated lemon peel before serving.
