Potato and Sausage Casserole


  • Cooking spray
  • 3 lb. peeled quartered russet potatoes
  • 1/4 cup unsalted butter
  • 2-1/2 lb. cleaned chopped kale
  • 2 large onions, diced
  • 1 lb. cured sausage, cut into 1/4-inch pieces
  • 3/4 cup chicken broth
  • 2 Tbsp. cider vinegar
  • 8 oz. shredded Swiss cheese


  • 1. Preheat standard oven to 350°F. Coat half hotel pan with cooking spray; set aside.
  • 2. Cook potatoes in boiling salted water to cover 8 minutes or until fork tender; drain.
  • 3. Cook kale and onions in butter in large skillet on medium heat 4 minutes. Stir in sausage. Cook 4 minutes.
  • 4. Combine sausage mixture and potatoes. Place in prepared pan. Pour combined broth and vinegar over mixture. Top with cheese. Bake 15 to 20 minutes or until heated through. Divide between 6 plates and serve.
