Ingredients
3 Tbsp. extra-virgin olive oil, divided
2 lb. sweet potatoes, peeled, cut into 1/2-inch cubes
12 oz. hot sausage, casings removed, crumbled
1 cup chopped onion
1 lb. sweet Italian frying peppers, seeded, cut into 1/2-inch pieces
1/2 cup chopped fresh cilantro
1/2 tsp. salt
1/4 tsp. black pepper
Directions
1. Cook sweet potatoes in medium saucepan in 2 Tbsp. of the oil on medium heat 12 to 15 minutes, stirring frequently, until potatoes are tender.
2. Cook sausage, onion and peppers in large skillet in remaining 1 Tbsp. of the oil on medium heat 4 to 6 minutes or until sausage is cooked through.
3. Stir sausage mixture into sweet potatoes. Stir in cilantro, salt and pepper. Divide mixture between 6 plates and serve.
