2 tsp. minced canned chipotle peppers in adobo sauce
12 Polish sausage links (6 oz. each), horizontally cut in half
4 French baguettes, ends trimmed, each cut crosswise into 3 equal pieces, then horizontally cut in half, toasted
5 cups mixed baby greens
1 large orange bell pepper, roasted, skin removed, seeded, cut into thin strips
1 large red bell pepper , roasted, skin removed, seeded, cut into thin strips
1 large yellow bell pepper, roasted, skin removed, seeded, cut into thin strips
5 medium tomatoes, thinly sliced
Directions
1. Combine mayo, garlic and peppers; set aside.
2. Heat sausage in salamander or broiler 8 to 10 minutes, turning occasionally, until internal temperature reaches 165°F.
5. Spread cut surfaces of baguettes with mayo mixture. Layer greens, sausage, roasted peppers and tomatoes on bottom of baguettes. Cover with top of baguettes and serve.
