Grilled Stuffed Calamari


  • 3/4 cup fine fresh bread crumbs
  • 1/3 cup whole milk
  • 12 oz. diced smoked sausage
  • 2 large cloves garlic, minced
  • 1 tsp. dried thyme
  • 12 cleaned small (3-to 4-inch) squid bodies plus tentacles (about 1 lb. total)
  • 3 Tbsp. extra-virgin olive oil
  • 3 Tbsp. chopped fresh flat-leaf parsley


  • 1. Preheat grill to medium-high direct heat.
  • 2. Soak breadcrumbs in milk in large bowl. Stir in sausage, garlic and thyme until well combined.
  • 3. Stuff calamari bodies with bread mixture.
  • 4. Brush calamari with oil. Grill 13 to 15 minutes or until calamari is tender and filling reaches an internal temperature of 165°F.
  • 5. Cut each calamari in half. Garnish with parsley and serve.
