Grilled Stuffed Calamari
Ingredients
3/4 cup fine fresh bread crumbs
1/3 cup whole milk
12 oz. diced smoked sausage
2 large cloves garlic, minced
1 tsp. dried thyme
12 cleaned small (3-to 4-inch) squid bodies plus tentacles (about 1 lb. total)
3 Tbsp. extra-virgin olive oil
3 Tbsp. chopped fresh flat-leaf parsley
Directions
1. Preheat grill to medium-high direct heat.
2. Soak breadcrumbs in milk in large bowl. Stir in sausage, garlic and thyme until well combined.
3. Stuff calamari bodies with bread mixture.
4. Brush calamari with oil. Grill 13 to 15 minutes or until calamari is tender and filling reaches an internal temperature of 165°F.
5. Cut each calamari in half. Garnish with parsley and serve.
