Maryland Sausage Crab Fritters
Ingredients
1 cup water
1/2 cup butter
1 cup all-purpose flour
1-1/4 tsp. salt
1 tsp. ground cumin
4 large eggs
1/2 cup diced dry-cured link sausage
2 Tbsp. sofrito
8 oz. lump crabmeat
Directions
1. Bring water to a boil in small saucepan on medium heat. Add butter, flour, salt and cumin. Whisk 2 minutes. Remove from heat.
2. Beat in eggs, one at a time, stirring vigorously. Add sausage, sofrito and crabmeat.
3. Fry 1 tablespoon portions of batter in preheated 375°F deep fat fryer 4 to 5 minutes or until golden brown. Drain on paper towels and serve.
