Mediterranean Frittata Bites


  • Cooking spray
  • 12 oz. fresh spinach, stems removed
  • 8 oz. mild Italian sausage, casings removed, crumbled
  • 1 cup chopped onions
  • 8 large eggs
  • 1/4 cup heavy whipping cream
  • 1/2 tsp. salt
  • 1/2 tsp. freshly ground black pepper
  • 1 cup crumbled Feta cheese
  • Chopped fresh Italian parsley (optional)


  • 1. Preheat standard oven to 325°F. Coat half sheet pan with cooking spray; set aside.
  • 2. Cook spinach in salted boiling water 1 to 2 minutes or until wilted. Cool in ice water and wring dry in a towel; finely chop.
  • 3. Sauté sausage and onion in medium skillet on medium heat 5 minutes. Remove from heat; cool.
  • 4. Whisk eggs, cream, salt and pepper in large bowl. Stir in spinach, sausage mixture and Feta cheese.
  • 5. Pour mixture into prepared pan. Bake 40 to 45 minutes or until mixture is firm. Cut frittata into 20 pieces. Sprinkle with parsley and serve.
