Ingredients
Cooking spray
12 oz. fresh spinach, stems removed
8 oz. mild Italian sausage, casings removed, crumbled
1 cup chopped onions
8 large eggs
1/4 cup heavy whipping cream
1/2 tsp. salt
1/2 tsp. freshly ground black pepper
1 cup crumbled Feta cheese
Chopped fresh Italian parsley (optional)
Directions
1. Preheat standard oven to 325°F. Coat half sheet pan with cooking spray; set aside.
2. Cook spinach in salted boiling water 1 to 2 minutes or until wilted. Cool in ice water and wring dry in a towel; finely chop.
3. Sauté sausage and onion in medium skillet on medium heat 5 minutes. Remove from heat; cool.
4. Whisk eggs, cream, salt and pepper in large bowl. Stir in spinach, sausage mixture and Feta cheese.
5. Pour mixture into prepared pan. Bake 40 to 45 minutes or until mixture is firm. Cut frittata into 20 pieces. Sprinkle with parsley and serve.
