Spanish Grilled Cheese Paninis


  • 6 Tbsp. butter, softened
  • 8 slices firm arepas bread
  • 16 slices (1/2 oz. each) Manchego cheese, divided
  • 12 oz. thinly sliced smoked ham
  • 8 slices Peppered Bacon, cooked drained


  • 1. Butter one side of each slice of bread. Place 4 bread slices, buttered side down, on parchment paper-lined half sheet pan. Top with half of the cheese, all of the ham and bacon Top with remaining cheese slices and bread, buttered side up. Refrigerate 30 minutes.
  • 2. Heat large heavy skillet on medium-high heat. Reduce heat to medium-low. Place sandwiches in skillet. Place a second large skillet over sandwiches. Place weight, such as large can of vegetables, in second skillet. Cook sandwiches 3 to 4 minutes per side or until golden brown on both sides and cheese is melted. Remove from skillet. Cut sandwiches in half and serve.
