1. Butter one side of each slice of bread. Place 4 bread slices, buttered side down, on parchment paper-lined half sheet pan. Top with half of the cheese, all of the ham and bacon Top with remaining cheese slices and bread, buttered side up. Refrigerate 30 minutes.
2. Heat large heavy skillet on medium-high heat. Reduce heat to medium-low. Place sandwiches in skillet. Place a second large skillet over sandwiches. Place weight, such as large can of vegetables, in second skillet. Cook sandwiches 3 to 4 minutes per side or until golden brown on both sides and cheese is melted. Remove from skillet. Cut sandwiches in half and serve.
