Arepas with Pulled Pork and Roasted Onions


  • 1/2 cup canola oil
  • 2 lb. thinly sliced red onions
  • 2 cups sour cream
  • 4 oz. pureed avocado
  • 1/4 cup chopped fresh cilantro
  • 2 Tbsp. lime juice
  • 5 lb. heated carnitas OR pulled pork
  • 10 Arepas rolls, horizontally cut in half, toasted


  • 1. Cook onions in oil in large skillet on medium-high heat 8 to 10 minutes or until golden.
  • 2. Combine sour cream, avocado, cilantro and cilantro in food processor. Pulse 30 to 60 seconds or until pureed.
  • 3. Divide carnitas over bottom of rolls. Top with onions and avocado mixture. Cover with top of roll and serve.
