Arepas with Pulled Pork and Roasted Onions
Ingredients
1/2 cup canola oil
2 lb. thinly sliced red onions
2 cups sour cream
4 oz. pureed avocado
1/4 cup chopped fresh cilantro
2 Tbsp. lime juice
5 lb. heated carnitas OR pulled pork
10 Arepas rolls, horizontally cut in half, toasted
Directions
1. Cook onions in oil in large skillet on medium-high heat 8 to 10 minutes or until golden.
2. Combine sour cream, avocado, cilantro and cilantro in food processor. Pulse 30 to 60 seconds or until pureed.
3. Divide carnitas over bottom of rolls. Top with onions and avocado mixture. Cover with top of roll and serve.
