Ingredients
8 (6-inch) corn tortillas
3 oz. olive oil
1 oz. balsamic vinegar
4 oz. sliced black olives, drained
4 oz. unpeeled diced cucumber
4 oz. diced fresh tomatoes
1 lb. heated thinly sliced smoked brisket
4 oz. crumbled Feta cheese
Directions
1. Preheat standard oven to 350°F. Wrap tortillas in foil. Bake 8 minutes.
2. Meanwhile, whisk together oil and vinegar. Stir in olives, cucumber and tomatoes.
3. Top tortillas with brisket and vegetable mixture. Sprinkle with cheese. Plate 2 tortillas per serving.
