Grilled Cajun Sandwich


  • 1 tsp. vegetable oil
  • 1 oz. thinly sliced red onion
  • 4 oz. heated sliced ham
  • 2 oz. cooked andouille sausage
  • 1 oz. canned roasted red peppers, drained, cut into strips
  • 2 slices (1/2 oz. each) Monterey Jack Cheese
  • 1 oz. shredded romaine lettuce
  • 1 sourdough roll, horizontally cut in half, toasted


  • 1. Caramelize onion in oil in small skillet on medium heat.
  • 2. Layer ham, sausage, red pepper and cheese on quarter sheet pan. Place under salamander or broiler about 1 minute or just until cheese is melted.
  • 3. Layer lettuce and onions on bottom of roll. Top with ham mixture. Cover with top of roll and serve.
