Springtime Bow Ties with Ham and Asiago

Ingredients

  • 1 lb. uncooked farfalle pasta
  • 2 lb. thin asparagus, trimmed, cut into 1-1/2-inch pieces
  • 1-1/2 cups diced smoked ham
  • 1 cup dry white wine
  • 1 cup heavy cream
  • 1 cup shredded Asiago cheese
  • 1 cup thinly sliced green onions, divided

Directions

  • 1. Cook pasta according to package directions 10 minutes. Add asparagus. Boil 2 to 3 minutes longer or until asparagus is crisp-tender and pasta is al dente, stirring occasionally. Drain.
  • 2. Meanwhile, heat large skillet on medium-high heat. Add ham and cook 2 minutes or until golden brown, stirring frequently. Stir in wine; simmer 2 minutes or until reduced by half. Stir in cream; bring to a simmer. Stir in cheese and 3/4 cup green onions. Add pasta and asparagus; toss to coat.
  • 3. Divide mixture between 4 plates. Sprinkle with remaining 1/4 cup onions and serve.
