Triple Smoke Burger

Ingredients

  • 1/2 cup mayonnaise
  • 1 Tbsp. minced chipotle peppers in adobo sauce
  • 1-1/2 Tbsp. Dijon mustard
  • 8 slices cooked bacon
  • 2 tsp. smoked paprika
  • 1 tsp. salt
  • 1-1/2 lb. ground beef chuck (80% lean)
  • Olive oil, as needed
  • 1 large red onion, cut into 4 thick slices, held together with wooden picks
  • 12 slices avocado
  • 4 hamburger buns, horizontally cut in half, toasted
  • 4 leaves lettuce
  • 1/4 cup chopped cilantro

Directions

  • 1. Puree mayonnaise, chipotle peppers and mustard. Stir in paprika and salt. Add to ground beef, mixing just until all ingredients are combined. Form beef mixture in 4 patties, each 4 inches in diameter.
  • 2. Cook patties on preheated grill on direct medium heat 4 to 6 minutes per side (160°F internal temperature) or to desired doneness.
  • 3. Meanwhile, brush both sides of onion and avocado slices with olive oil. Grill onion 2 to 3 minutes per side or until slightly charred; discard wooden picks. Grill avocado about 30 seconds per side or just until grill marks appear.
  • 4. Spread mayonnaise mixture evenly on bottom half of buns. Top with lettuce, burger, onion, bacon, avocado and cilantro. Cover with top and serve.
