Asparagus, Ham, and Cheese Melts
Ingredients
1/2 cup freshly grated Parmesan cheese
1/4 cup mayonnaise
1 lb. thin asparagus spears
4 slices Italian bread, toasted
2 tsp. unsalted butter, softened
4 oz. sliced ham
Directions
1. Preheat salamander or broiler. Combine cheese and mayonnaise; set aside.
2. Trim asparagus to fit bread. Cook asparagus in 1/2-inch salted water in covered skillet on medium-high heat 3 to 4 minutes or until tender; drain.
3. Spread butter on one side of 2 slices of the bread. Evenly divide ham over buttered bread. Top with asparagus and cheese mixture.
4 Broil about 1 minute or until light golden. Cover each with second slice of bread. Cut in half to serve.
