Bacon Mashed Potatoes


  • 3 lb. peeled Idaho potatoes, cut into 2-inch chunks
  • 8 oz. chopped bacon
  • 1 Tbsp. balsamic vinegar
  • 2 Tbsp. chopped fresh parsley
  • 1 tsp. sugar


  • 1. Cook potatoes in a steamer for 18 to 20 minutes or until tender.
  • 2. Meanwhile, cook bacon in skillet on medium heat until brown and crisp. Stir in vinegar, parsley and sugar. Add potatoes; toss to combine.
  • 3. Remove mixture from pan. Mash by hand. Keep warm until ready to serve.
