Bacon Mashed Potatoes
Ingredients
3 lb. peeled Idaho potatoes, cut into 2-inch chunks
8 oz. chopped bacon
1 Tbsp. balsamic vinegar
2 Tbsp. chopped fresh parsley
1 tsp. sugar
Directions
1. Cook potatoes in a steamer for 18 to 20 minutes or until tender.
2. Meanwhile, cook bacon in skillet on medium heat until brown and crisp. Stir in vinegar, parsley and sugar. Add potatoes; toss to combine.
3. Remove mixture from pan. Mash by hand. Keep warm until ready to serve.
