Roasted Potatoes with Bacon, Cheese and Sage

Ingredients

  • 6 oz. coarsely chopped bacon
  • 2 Tbsp. olive oil
  • 3 lb. unpeeled medium Idaho potatoes, each cut into 8 wedges
  • 1/2 tsp. salt
  • 1/4 tsp. ground black pepper
  • 1/2 cup grated Parmesan cheese
  • 2 finely chopped garlic cloves
  • 1/4 cup chopped fresh sage

Directions

  • 1. Preheat standard oven to 400°F.
  • 2. Cook bacon on parchment paper-lined sheet pan 6 to 8 minutes or until brown and crisp. Remove from pan and drain on paper towels; set aside. Reserve bacon drippings.
  • 3. Brush full sheet pan with oil and half of reserved drippings. Sprinkle potatoes with salt and pepper. Place in single layer in pan. Bake 20 to 25 minutes or until golden and tender, turning over half way through baking time.
  • 4. Reduce oven temperature to 375°F. Sprinkle potatoes with cheese, bacon and garlic. Drizzle with remaining drippings. Bake 12 to 15 minutes or until cheese is melted. Sprinkle each serving with sage before plating.
