Soba Noodles with Egg and Ham


  • 1/4 cup canola oil, divided
  • 5 coarsely chopped garlic cloves
  • 4 oz. thinly sliced Ham-Off-The-Bone
  • 8 oz. cooked bias cut asparagus
  • 8 oz. cooked bias cut green beans
  • 12 oz. cooked soba noodles
  • 8 large eggs


  • 1. Sauté garlic in 2 Tbsp. of the oil in large skillet on medium heat 1 minute, stirring frequently.
  • 2. Stir in ham, asparagus and green beans; toss to coat. Add soba noodles and coat evenly; keep warm.
  • 3. Fry eggs in remaining 2 Tbsp. oil in separate skillet on medium heat to desired doneness.
  • 4. Divide noodles evenly between 8 plates. Top each with a fried egg and serve.
