Winter Soup with Ham
Ingredients
1/2 cup butter
8 oz. diced Ham-Off-The-Bone
2 cups frozen corn kernels
1 cup chopped onions
1 peeled medium parsnip, cut into 1- inch pieces
1 peeled medium Yukon Gold potato, cut into 1-inch pieces
1/2 cup chopped red bell pepper
1/2 cup chopped green bell pepper
2 chopped garlic cloves
1 smoked ham hock (about 10 oz.)
5 cups chicken broth
Directions
1. Sauté diced ham, corn, onion, parsnip, potato, peppers and garlic in butter in saucepot on medium heat 5 minutes.
2. Add ham hock and broth. Bring to a boil; reduce heat to medium-low. Simmer, uncovered, 20 minutes.
3. Remove ham hock. Divide soup evenly between 8 bowls and serve.
