4 unpeeled cored large red apples, each cut into 10 slices
2 cups chopped onions
2 Tbsp. cider vinegar
2 cups apple juice
1/3 cup whole-grain mustard
Directions
1. Sauté ham in 1/4 cup of the butter in large skillet on medium-high heat until lightly browned on both sides. Remove from skillet and keep warm.
2. Add remaining 1/4 cup butter to skillet. Sauté apples 4 to 6 minutes or until tender. Layer ham and apple slices to form 8 stacks; keep warm.
3. Stir onions, vinegar, cider and mustard into skillet. Bring to a boil on medium heat; reduce heat to medium-low. Simmer, uncovered, until liquid is reduced by half. Plate 1 stack per serving. Spoon sauce evenly over stack and serve.
