Prosciutto Bruschetta with Ricotta Cheese

Ingredients

  • ½ cup tomatoes, seeded and diced
  • ¼ cup basil
  • 2 tsp. balsamic vinegar
  • ½ tbsp. minced garlic
  • 2 ½ tbsp. extra virgin olive oil
  • 16 slices Prosciutto
  • 4 tbsp. fresh ricotta cheese
  • 1 Italian baguette, cut in half crosswise then lengthwise

Directions

  • 1. In a bowl, toss together the tomatoes, basil and garlic. Mix in the balsamic vinegar, olive oil, kosher salt, and pepper.
  • 2. Toast baguette slices under a broiler.
  • 3. Layer toasted bread slices with tomato mixture, ricotta and prosciutto.
