Lentil Soup with Smoked Ham

Ingredients

  • 1-1/2 Tbsp. olive oil
  • 1-1/2 cups diced smoked ham
  • 2 tsp. dried savory
  • 1-1/2 tsp. dry mustard
  • 3 to 3-1/2 cups canned reduced-sodium chicken broth
  • 1 cup rinsed brown lentils
  • 1 can (14.5 oz.) diced tomatoes with roasted garlic, undrained

Directions

  • 1. Cook ham, savory and mustard in oil in saucepan on medium-high heat 2 minutes.
  • 2. Stir in 3 cups broth and lentils. Bring to a boil; reduce heat to medium. Simmer, covered, 20 to 25 minutes or until lentils are tender.
  • 3. Stir in tomatoes. Simmer, uncovered, 2 minutes. Add more broth by 1/4 cupfuls to thin soup, if desired. Divide soup between 8 bowls and serve.
