Country Breakfast Open Faced Sandwich

Ingredients

  • 2 large eggs
  • 1 English muffin, horizontally cut in half, toasted
  • 1 oz. shredded romaine
  • 4 oz. heated sliced ham
  • 2 slices (1/2 oz. each) Mozzarella cheese
  • 2 oz. cooked drained bacon slices
  • 2 Tbsp. grainy mustard
  • 2 Tbsp. mayonnaise
  • 1 tsp. honey

Directions

  • 1. Fry eggs in medium skillet on medium heat to desired doneness.
  • 2. Divide lettuce evenly between top and bottom halves of muffin. Top evenly with ham, cheese, bacon and eggs.
  • 3. Combine mustard, mayonnaise and honey. Spoon over each muffin half and serve.
