Open-Faced Cucumber and Bacon Sandwiches

Ingredients

  • Ingredients:
  • 1/2 cup plain yogurt
  • 1/2 English cucumber, diced
  • 1/2 tsp. minced garlic
  • 6 slices bacon
  • 2 large slices country-style bread, lightly toasted

Directions

  • 1. Drain yogurt 20 minutes.
  • 2. Combine yogurt, cucumber and garlic. Set aside.
  • 3. Cook bacon in skillet on medium heat until brown and crisp. Remove and drain on paper towels.
  • 4. Divide cucumber mixture evenly over bread. Top with bacon.
