Italian Chopped Salad with Salami and Pepperoni

Ingredients

  • 1 head romaine lettuce, torn into bite-size pieces
  • 1-1/2 cups canned artichoke hearts, chopped, well drained
  • 4 oz. julienned Genoa salami
  • 4 oz. thinly sliced pepperoni
  • 1/3 cup julienne roasted yellow pepper
  • 1/3 cup chopped red onion
  • 1/4 cup pitted mixed olives, drained
  • 5 chopped pepperoncini
  • 1 oz. Provolone cheese, cut into 1/4-inch cubes
  • 2 Tbsp. grated Romano cheese
  • 1/2 cup olive oil
  • 3 Tbsp. red wine vinegar
  • 1/2 tsp. salt
  • 1/4 tsp. ground black pepper

Directions

  • 1. Combine lettuce, artichoke hearts, salami, pepperoni, peppers, onion, olives, pepperoncini and cheeses. Refrigerate 2 to 3 hours.
  • 2. Add combined oil, vinegar, salt and pepper. Toss gently to combine.
  • 3. Divide mixture evenly among 4 plates and serve.
