Salami Panini with Peppers and Mushrooms

Ingredients

  • 4 Tbsp. olive oil, divided
  • 3 slices sun-dried tomatoes in olive oil, well drained
  • 1 large ciabatta roll, horizontally cut in half
  • 1/2 cup fresh baby spinach
  • 10 thin slices Genoa salami
  • 1/4 cup fresh Buffalo Mozzarella
  • 1/2 cup sliced marinated mushrooms
  • 1/2 cup diced roasted yellow pepper

Directions

  • 1. Combine 3 Tbsp. of the olive oil and sun-dried tomatoes in blender. Spread mixture evenly over both cut surfaces of roll.
  • 2. Cover bottom of roll with spinach, salami, cheese, mushrooms and peppers. Drizzle with remaining 1 Tbsp. olive oil.
  • 3. Cover with top of roll. Grill in heated pannini press until golden on both sides and cheese is melted.
