Bacon and Spinach Pasta

Ingredients

  • 3 Tbsp. extra-virgin olive oil
  • 4 cups baby spinach
  • 1 cup grape tomatoes
  • 1 Tbsp. balsamic vinegar
  • 1 lb. linguine, cooked, drained
  • 8 oz. cooked crumbled bacon
  • 2 cups caramelized red onions
  • 1/2 cup shredded Parmesan cheese

Directions

  • 1. Sauté spinach and tomatoes in oil in large skillet on medium heat 2 to 3 minutes or until spinach is wilted and tomatoes are soft, stirring frequently. Stir in vinegar.
  • 2. Stir in pasta, bacon and onions. Heat 5 minutes, stirring occasionally.
  • 3. Divide evenly between 4 plates. Sprinkle with cheese and serve.
