1. Cook onions in oil in small skillet on medium heat 2 minutes. Stir in sugar; reduce heat to medium-low. Continue cooking mixture 12 to 15 minutes or until onions are caramelized. Keep warm; set aside.
2. Meanwhile, bring stock and wine in a medium saucepan on medium-high heat to a boil. Stir in ziti; reduce heat to medium. Cook according to package directions for al dente. Stir in tomatoes, chicken, prosciutto and mushrooms. Heat 5 minutes.
3. Stir in arugula, basil and parsley. Heat 1 minute.
4. Divide mixture evenly between 4 plates. Sprinkle with reserved onions and cheese, and serve.
