Bistro Spinach Salad

Ingredients

  • 8 oz. cooked diced peppered bacon
  • 4 oz. crumbled Feta cheese
  • 4 oz. diced tomatoes
  • 4 cups baby spinach
  • 1 cup unpeeled julienne pears
  • 4 oz. Sherry Vinaigrette
  • 4 poached eggs
  • 1 cup fried onions

Directions

  • 1. Gently toss bacon, cheese, tomatoes, spinach, pears and vinaigrette. Divide evenly between 4 plates.
  • 2. Top each with a poached egg. Sprinkle with onions and serve.
