Thai Beef and Noodle Salad

Ingredients

  • 12 oz. cooked julienne roast beef
  • 4 oz. peeled pitted sliced avocado
  • 4 oz. julienne carrots
  • 4 oz. peeled pitted julienne mango
  • 4 oz. roasted lightly salted peanuts
  • 4 oz. cooked soba noodles
  • 4 oz. julienne fresh tomatoes
  • 4 cups baby spinach
  • 2 oz. sliced green onions
  • 4 oz. Asian Vinaigrette

Directions

  • 1. Gently toss all ingredients except dressing. Refrigerate until ready to use.
  • 2. Gently toss salad ingredients with dressing.
  • 3. Divide mixture evenly between 4 plates and serve.
