Thai Coconut Beef Soup

Ingredients

  • 2 cups beef broth
  • 1 cup canned coconut milk
  • 8 oz. cooked shredded pot roast
  • 1/2 cup julienne carrots
  • 1/2 cup julienne onions
  • 1/2 cup bean sprouts
  • 1/4 cup sriracha sauce
  • 1 tsp. chopped fresh garlic
  • 1 tsp. peeled chopped fresh gingerroot
  • 2 Tbsp. chopped fresh cilantro

Directions

  • 1. Bring all ingredients, except cilantro, to a boil in medium saucepan on medium heat; reduce heat. Simmer, uncovered, 8 to 10 minutes or until vegetables are crisp-tender.
  • 2. Divide soup evenly between 4 bowls. Sprinkle with cilantro and serve.
