Seafood Crudo

Ingredients

  • 1/4 cup fresh orange juice
  • 2 Tbsp. fresh lemon juice
  • 2 Tbsp. soy sauce
  • 1 Tbsp. canola oil
  • 1 tsp. chopped fresh garlic
  • 1 tsp. peeled chopped fresh gingerroot
  • 1 tsp. chopped red chile
  • 1 tsp. rice wine vinegar
  • 4 oz. sushi-grade raw scallops, thinly sliced
  • 4 oz. sushi-grade raw peeled shrimp, thinly sliced
  • 1 cup prosciutto, crisped in the oven, chopped
  • 1/2 cup chopped fresh cilantro
  • 1/2 cup thinly sliced green onions

Directions

  • 1. Whisk orange and lemon juices, soy sauce, oil, garlic, ginger, chile and vinegar until well blended. Divide mixture evenly between 4 medium sized rimmed plates.
  • 2. Arrange scallops and shrimp evenly over juice mixture. Sprinkle with prosciutto, cilantro and onions, and serve.
