Grilled Asparagus in Lettuce Cups

Ingredients

  • 8 oz. asparagus spears
  • 1 Tbsp. olive oil
  • 2 oz. diced salami
  • 1 Tbsp. diced shallot
  • 1 tsp. minced fresh garlic
  • 2 Tbsp. unpeeled diced green apple
  • 1 tsp. lemon juice
  • 8 leaves Bibb lettuce
  • 2 Tbsp. chopped Brie cheese

Directions

  • 1. Preheat grill on medium direct heat. Brush asparagus with olive oil. Grill 2 to 3 minutes or until tender-crisp, turning frequently. Remove from grill. Cut into 1-inch pieces.
  • 2. Meanwhile, sauté salami, shallot and garlic in small skillet on medium heat 2 to 3 minutes or until shallot is tender. Remove from heat.
  • 3. Combine asparagus and salami mixture. Toss apples in lemon juice. Add to asparagus mixture.
  • 4. Divide mixture evenly between 8 lettuce leaf “cups”. Sprinkle with Brie. Plate 2 per serving.
