Edamame Bruschetta

Ingredients

  • 2 cups frozen edamame, thawed, shelled
  • 4 oz. peppered bacon, cooked, drained, chopped into 1/4-inch pieces
  • 2 oz. seeded diced tomatoes
  • 2 oz. olive oil
  • 2 Tbsp. fresh basil chiffonade
  • 1 Tbsp. minced fresh garlic
  • 1 tsp. minced fresh sage
  • 1 French baguette, diagonally cut into 8 slices (each 1-inch thick), toasted
  • Fresh basil leaves (optional)

Directions

  • 1. Combine all ingredients except bread; mix well. Refrigerate 1 to 2 hours or until well chilled.
  • 2. Divide mixture evenly between bread slices. Plate 2 slices per serving. Garnish plate with additional fresh basil.
