Turkey Cucumber and Tomato Salad

Ingredients

  • 3 Tbsp. canola oil
  • 1 Tbsp. fresh lime juice
  • 1 tsp. chopped fresh thyme
  • 1 lb. chopped reduced sodium turkey breast
  • 3 cups chopped unpeeled cucumber
  • 2 cups chopped tomatoes
  • 1 cup peeled chopped avocado
  • 1/4 cup chopped scallions
  • 1/4 cup basil chiffonade

Directions

  • 1. Whisk oil, lime juice and thyme; set aside until ready to use.
  • 2. Combine turkey, chopped vegetables and herb. Refrigerate until ready to use.
  • 3. Gently toss oil mixture with turkey mixture. Divide evenly between 4 plates and serve.
