Roasted Baby Vegetables with Ham

Ingredients

  • Ingredients:
  • 15 baby carrots
  • 6 baby golden beets, peeled, halved
  • 6 baby patty pan squash
  • 6 baby turnips, peeled
  • 6 baby zucchini, trimmed
  • 2 Tbsp. olive oil
  • 2 oz. chopped ham
  • 1 Tbsp. fresh chopped parsley
  • 1 Tbsp. fresh chopped tarragon

Directions

  • 1. Preheat standard oven to 450°F. Toss vegetables with olive oil. Place on parchment paper-lined full sheet pan. Bake 28 to 30 minutes or until crisp-tender.
  • 2. Remove vegetables and toss with ham, parsley and tarragon.
  • 3. Divide evenly between 4 plates and serve.
