Couscous with Peas, Lemon, Chives and Bacon

Ingredients

  • 3/4 cup chicken stock
  • 1/2 cup chopped shallots
  • 2 cloves garlic, minced
  • 1 Tbsp. extra virgin olive oil
  • 1/4 tsp. turmeric
  • 3/4 cup uncooked couscous
  • 1 cup frozen peas, thawed
  • 2 oz. cooked drained crumbled bacon
  • 1/2 cup chopped fresh chervil
  • 1/2 cup chopped fresh chives
  • 1/4 cup chopped fresh marjoram
  • Zest and juice of 1/2 lemon

Directions

  • 1. Bring broth, shallots, garlic, oil and turmeric in medium saucepan on medium heat to boiling.
  • 2. Stir in couscous; cover pan. Remove from heat. Let stand 5 minutes.
  • 3. Fluff couscous with a fork. Stir in peas, bacon, chervil, chives, marjoram, and lemon zest and juice.
  • 4. Divide evenly between 4 plates and serve.
