Prosciutto and Asparagus Salad

Ingredients

  • 2 Tbsp. olive oil
  • 1 Tbsp. fresh lime juice
  • 1 tsp. chopped fresh thyme
  • 2 oz. thinly sliced prosciutto
  • 1 cup peeled chopped avocado
  • 1/2 cup grilled asparagus spears, cut into 1-inch pieces
  • 1/4 tsp. sea salt

Directions

  • 1. Whisk together olive oil, lime juice and thyme; set aside.
  • 2. Evenly divide prosciutto between 4 plates. Top with combined avocado, asparagus and sea salt.
  • 3. Drizzle each with olive oil mixture and serve.
