Potato Pancakes

Ingredients

  • 2-1/2 oz. chopped bacon
  • 1 Tbsp. minced fresh garlic
  • 2 lb. peeled thinly sliced baking potatoes
  • 8 oz. shredded Parmesan cheese
  • 1 Tbsp. chopped fresh sage

Directions

  • 1. Preheat oven to 375°F. Cook bacon in skillet on medium heat until brown and crisp. Add garlic and cook 1 minute. Reduce heat to low.
  • 2. Toss potatoes with cheese and sage. Layer potatoes in pan over bacon mixture.
  • 3. Bake 25 to 30 minutes or until top and sides of potatoes are golden and crisp and center is soft but cooked through. Cut into 4 wedges and serve.
