Mixed Rice Pilaf

Ingredients

  • BROWN RICE
  • 1 oz. butter, softened
  • 1/2 oz. minced fresh garlic
  • 1/2 oz. diced shallots
  • 6 oz. chicken stock
  • 5 oz. cooked brown rice
  • 2 oz. diced Ham-Off-The-Bone
  • WILD RICE
  • 6 oz. chicken stock
  • 5 oz. cooked wild rice
  • 2 oz. diced Ham-Off-The-Bone
  • 2 oz. apple cider
  • 1 oz. dried sweetened cranberries
  • 1 oz. minced shallots
  • 1 oz. dry white wine
  • 1 tsp. dried crushed thyme
  • 1 tsp. dried crushed sage

Directions

  • 1. For the Brown Rice, sauté garlic and shallots in butter in medium skillet on medium heat 2 minutes. Stir in remaining Brown Rice ingredients. Heat through; keep warm.
  • 2. For Wild Rice, combine all ingredients in medium saucepan on medium heat. Heat through. Stir in Brown Rice mixture.
  • 3. Divide rice mixture evenly between 4 plates and serve.
