Autumn Sandwich

Ingredients

  • 4 oz. roasted sliced portobello mushrooms
  • 2 oz. roasted corn
  • 2 oz. roasted diced tomatoes
  • 1 oz. seeded diced jalapeno peppers
  • 4 sourdough rolls, horizontally cut in half, toasted
  • 2 oz. shredded romaine lettuce
  • 4 slices tomato
  • 12 oz. sliced Ham-Off-The-Bone
  • 8 slices (1/2 oz. each) Cheddar cheese

Directions

  • 1. Combine mushrooms, corn, diced tomato and jalapeno peppers. Refrigerate until ready to use.
  • 2. Divide lettuce evenly over bottom half of rolls. Top with sliced tomato, ham and cheese.
  • 3. Divide salsa evenly over cheese. Cover with top of roll and serve.
