Fall Risotto Croquettes

Ingredients

  • 1-1/2 cups leftover risotto (any flavor)
  • 4 oz. diced Black Forest Ham
  • 2 oz. shredded Mozzarella cheese
  • 1/4 cup shredded Parmesan cheese
  • 1 egg yolk
  • 1 Tbsp. heavy cream
  • 2 tsp. chopped fresh thyme
  • 4 oz. all-purpose flour
  • 1 egg white, beaten
  • 2 Tbsp. water
  • 1/2 cup plain bread crumbs
  • Tomato sauce (optional)

Directions

  • 1. Preheat deep fryer to 350°F.
  • 2. Combine risotto, ham, cheeses, egg yolk, cream and thyme. Divide evenly into 4 portions. Roll into balls.
  • 3. Roll each in flour, then dip into combined egg white and water. Roll in bread crumbs.
  • 4. Fry 3 to 4 minutes or until golden brown. Plate 1 croquette per serving. Serve with tomato sauce, if desired.
