Acorn Squash, Bacon and Goat Cheese Pizza

Ingredients

  • 4 cups peeled seeded diced acorn squash
  • 2 Tbsp. canola oil
  • 2 pizza crusts (12-inches each)
  • 3 cups baby spinach
  • 2 cups sliced red onions
  • 1 cup cooked bacon
  • 1/2 tsp. dried oregano
  • 1/2 tsp. dried sage
  • 8 oz. soft goat cheese, crumbled

Directions

  • 1. Preheat convection oven to 350°F.
  • 2. Toss squash with canola oil. Spread evenly on parchment paper-lined half sheet pan. Bake 10 to 15 minutes or until fork tender.
  • 3. Dividing ingredients evenly between crusts, layer squash, spinach, onions and bacon. Sprinkle with spices. Top with goat cheese.
  • 4. Bake pizza 10 to 12 minutes or until all ingredients are heated and cheese is melted.
  • 5. Cut each pizza into 6 wedges. Plate 2 pieces per serving.
