Sausage Frittata

Ingredients

  • 1 lb. peeled diced potatoes
  • 3 Tbsp. canola oil
  • 12 large eggs
  • 3 cups baby spinach
  • 1/2 cup cooked crumbled bacon
  • 1/2 cup diced smoked sausage
  • 1/4 cup shredded Parmesan cheese
  • 1 Tbsp. chopped fresh parsley

Directions

  • 1. Preheat convection oven to 325°F.
  • 2. Sauté potatoes in canola oil in large deep skillet on medium heat 5 to 8 minutes or until tender.
  • 3. Whisk eggs. Stir in spinach, bacon, sausage, cheese and parsley. Pour egg mixture into skillet with potatoes. Cover with foil.
  • 4. Bake 15 minutes. Remove foil and continue to bake 5 to 8 minutes longer or until center is set.
  • 5. Slide frittata out of skillet onto cutting board. Cut into 6 wedges to serve.
