1. Cook bacon in skillet on medium heat until brown and crisp. Remove bacon and drain on paper towels. Set aside. Reserve drippings in skillet.
2. Sauté shallots in drippings 2 to 3 minutes or until translucent. Stir Brussels sprouts and olive oil into skillet. Cook on medium heat 10 to 12 minutes or until Brussels sprouts are fork tender and caramelized, stirring frequently. Stir in sage.
3. Divide mixture evenly among 6 plates. Sprinkle with bacon before serving.
