Roman Pasta Salad

Ingredients

  • 1 lb. bow tie pasta, uncooked
  • 6 oz. diced pepperoni
  • 6 oz. diced hard salami
  • 2/3 cup olive oil
  • 1/3 cup balsamic vinegar
  • 2 cups halved grape tomatoes
  • 1/4 cup sliced green onions
  • 2/3 cup pitted kalamata olives, drained
  • 1/2 diced green bell pepper
  • 2 Tbsp. thinly sliced fresh basil
  • Grated Parmesan cheese, (optional)

Directions

  • 1. Cook pasta according to package directions to al dente; drain. Cool in an ice bath; drain.
  • 2. Combine all ingredients except basil and Parmesan cheese.
  • 3. Serve at room temperature or chilled.
  • 4. Garnish each serving with basil and Parmesan cheese.
