Broccoli Salad with Bacon

Ingredients

  • 2 large heads of broccoli, cut into florets
  • 8 oz. cooked chopped bacon
  • 1/2 cup halved red and yellow grape tomatoes
  • 1/4 cup thinly sliced red onion
  • 1/4 cup thinly sliced green onions
  • 1/2 cup mayonnaise
  • 1/2 cup plain yogurt
  • 1/4 cup sugar
  • 2 Tbsp. red wine vinegar
  • 2 Tbsp. chopped fresh parsley

Directions

  • 1. Combine broccoli, bacon, tomatoes and onions.
  • 2. Combine mayonnaise, yogurt, sugar and vinegar.
  • 3. Toss mayonnaise mixture with vegetables. Chill 1 to 2 hours.
  • 4. Divide evenly between 6 plates. Sprinkle with parsley before serving.
