Summer Berry Salad with Prosciutto

Ingredients

  • 3 Tbsp. olive oil
  • 3 Tbsp. fresh lime juice
  • 1-1/2 Tbsp. chopped fresh basil
  • 1-1/2 Tbsp. chopped fresh parsley
  • 3/4 tsp. coarse kosher salt
  • 1/4 tsp. finely grated lemon peel
  • 1-1/2 cups fresh blueberries
  • 1-1/2 cups fresh raspberries
  • 1-1/2 cups fresh strawberries, quartered
  • 1-1/2 cups thinly sliced red onions
  • 18 paper-thin prosciutto slices
  • Additional grated lemon peel (optional)

Directions

  • 1. Combine olive oil, lime juice, basil, parsley, salt and lemon peel.
  • 2. Combine berries and onions. Toss lightly with oil mixture.
  • 3. Divide prosciutto slices evenly among 6 plates. Top with berry mixture.
  • 4. Garnish with grated lemon peel before serving.
