Sausage Jambalaya

Ingredients

  • 1 Tbsp. vegetable oil
  • 1 lb. diced Polish sausage
  • 2 green bell peppers, seeded, finely chopped
  • 1 medium onion, finely chopped
  • 2 stalks celery, finely chopped
  • 2 scallions, finely chopped
  • 3 cloves garlic, finely chopped
  • 2-1/2 cups uncooked long-grain white rice
  • 1 can (20 oz.) diced tomatoes , NOT drained
  • 3-1/2 cups chicken broth
  • 1 Tbsp. dried gumbo filé

Directions

  • 1. Cook sausage in oil in medium saucepan on medium heat 4 to 5 minutes or until light brown. Stir in peppers, onion, celery, scallions and garlic. Cook 4 minutes.
  • 2. Stir in rice, tomatoes with liquid, broth and gumbo filé. Bring to a boil. Reduce heat to low. Simmer, covered, 20 to 22 minutes or until rice is tender and most of liquid is absorbed. Divide mixture between 10 bowls and serve.
