Grilled Flatbread with Sausage, Onions and Goat Cheese

Ingredients

  • Cooking spray
  • 2 Tbsp. vegetable oil
  • 1-1/2 lb. halved thinly sliced red onions
  • 1/2 cup Pinot Noir
  • 2 Tbsp. balsamic vinegar
  • 1 tsp. sugar
  • 1 lb. frozen pizza dough, thawed
  • 12 oz. sweet Italian sausage, casings removed, crumbled
  • 2 cups soft crumbled goat cheese, divided

Directions

  • 1 Preheat grill to medium–high direct heat. Coat full sheet pan with cooking spray; set aside.
  • 2. Sauté onions in oil in medium skillet on medium heat 3 minutes.
  • 3. Stir in wine, vinegar and sugar. Bring to a boil; reduce heat to medium-low. Simmer 5 minutes. Remove from heat; cool to room temperature.
  • 4. Press pizza dough onto bottom of prepared pan to 1/4-inch thickness. Grill 4 to 5 minutes or until dough is firm on top.
  • 5. Remove from grill; turn dough over and place back on pan. Arrange onion mixture, sausage and cheese over dough.
  • 6. Return to grill. Cook, covered, 6 to 8 minutes or until sausage is cooked and cheese is melted. Remove from grill, cut into 12 pieces and serve.
