Maryland Sausage Crab Fritters

Ingredients

  • 1 cup water
  • 1/2 cup butter
  • 1 cup all-purpose flour
  • 1-1/4 tsp. salt
  • 1 tsp. ground cumin
  • 4 large eggs
  • 1/2 cup diced dry-cured link sausage
  • 2 Tbsp. sofrito
  • 8 oz. lump crabmeat

Directions

  • 1. Bring water to a boil in small saucepan on medium heat. Add butter, flour, salt and cumin. Whisk 2 minutes. Remove from heat.
  • 2. Beat in eggs, one at a time, stirring vigorously. Add sausage, sofrito and crabmeat.
  • 3. Fry 1 tablespoon portions of batter in preheated 375°F deep fat fryer 4 to 5 minutes or until golden brown. Drain on paper towels and serve.
